Well I haven't posted in a while not because I don't have time but because I don't really have anything to post about! We are just so boring! Neither of us are going to school, we don't have kids, and we don't really do lots of exciting things! So, I have been thinking of what I can blog about. I decided that I am going to start trying new recipes and post about them. I am not a good cook AT ALL! But, I do like to try new things. I have been trying a few new recipes that I have found in various places or got from my mom. Before I get too far into food though, I wanted to tell everyone about a wonderful website that I have been going to lately...
The website is www.mypyramid.gov. All you have to do is sign up (it's free) and you are ready to track your food intake and exercise intake. Seriously I really like this. You just type in the food you eat and the amount you ate and it already has all of the nutrition information. It develops a different food pyramid for each person based on age, weight, height, and maybe some other things. Now, I have never been a healthy eater. I was SO surprised to see how bad I was eating. I eat WAY too much saturated fat. So, after tracking my food intake (I don't exercise so I don't track that) :) I decided to try and eat a little better. It is kind of fun. So, to everyone that reads this, you should try it out and let me know what you think.
Okay, now to the recipe. A couple days ago I was craving cupcakes (weird, I know). I wanted to make some homemade ones, not from a boxed cake batter. So, I looked and looked and finally decided to make these ones. They are chocolate cupcakes with cream cheese filling (it ends up tasting like cheesecake). Here is the recipe:
Cupcake mix
1 1/2 C. Flour
1 t. baking soda
1/2 t. salt
1 C. sugar
1/4 C. Cocoa
1 t. vanilla
1/2 C. Vegetable oil
1 T vinegar
Filling
8 oz. cream cheese
1 egg
1/2 C. sugar
1 C. mini chocolate chips (or regular ones) (I use semisweet)
Mix cupcake ingredients in order listed. Set aside. Then make the filling in a separate bowl. Make sure the cream cheese is about room temp (or soft enough to mix). Mix cream cheese, egg, and sugar. After you have a creamy mixture, add the chocolate chips and mix.
Fill the cupcake tins up about 2/3 of the way with the cupcake batter. Then, drop in about 1 T. (or as much as you want) into each cupcake. Brady and I don't really like cheese cake so I don't like to put very much in the cupcakes, but you can put a large spoonful in. Bake them on 350 for about 20 minutes. (Mine took about 21.5 minutes). Remove and let cool. Frost with chocolate buttercream frosting (recipe below).
Chocolate Buttercream Frosting
2 oz. unsweetened baking chocolate
3 T. butter
2 C. Confectioner' sugar (powdered sugar) (I didn't know this until a couple months ago)
1 t. vanilla
Milk (as much as you need)
Melt the chocolate in a medioum size bowl in the microwave (I do it on heat level 6 for 1 minute increments). Melt the butter in another small bowl. Add the melted butter to the melted chocolate and mix. Add the vanilla and mix. Add the confectioners' sugar and mix. Mine turned out to be crumbly at this point so I added a little milk (maybe 2 T). Keep adding a little milk and mixing until it is creamy enough to frost with.
This sounds like a lot of work but it really isn't. They are pretty quick and really easy. I took them to work and to my family's house and everyone said they were good. So, if you try it you will have to let me know what you think!

You are such a liar because you are a GREAT cook and baker. I won't let you get away with saying you are not a good cook. Hope all is well. I feel like I haven't seen you in forever. Oh and the cupcakes sound terrific. I will have to try them, but then again I am the worst baker!
oh man...i totally would've cooked those if we were back home. here we can't find much normal food and especially normal cooking material....but i'm writing it down for the future:)
and that tracker looks cool! i've already started tracking things! first thing down--frosted mini wheats...2 servings sizes!

Steph, I totally know how you feel about the whole blogging thing. I want to keep blogging but honestly have NOTHING to blog about. I think that it will be a great idea to share your recipes with us. I LOVE cheesecake so I can't wait to try this one. Or maybe I could just hire you to make some for me :o) YUM!
Steph, I love how you use the pyramid to track how healthy you eat and then post a recipe for cupcakes! You are my kind of girl! I am interested to know HOW to eat healthier but I'm not sure I really want to DO it!

we learned all about that website in one of my personal training classes, it is a great website! i haven't used the tracker really, even though i am signed up for it... however, i have used calorie king. it is a good website for tracking calories too. that recipe looks sinful!
