So Brady and I decided that we need to be better at planning meals. Since we have moved out of my parent's house we have not had great meals. So, last week we decided to make a menu for the week. We also decided that I am going to just go to the store once to get everything we need. We did really good last week and it felt good to have dinner all planned out when I got home. So, I think I am going to try and post what we are going to have for the week on our blog so there is a little accountability. If any of you have good ideas for some pretty easy recipes, please let me know!!! I am open to anything. So, here is our menu for the week.
Monday: Chimmichangas
Tuesday: Chicken Spaghetti
Wednesday: Leftover buffet (not my favorite but I don't like food left in the fridge and Brady doesn't like to throw anything away)
Thursday: Spaghetti and Meatballs
Friday or Saturday: go out one night, breakfast for dinner another
So, I guess next week I will have to report on how I did this week. But really, please let me know if you know of any good recipes or any blogs or websites with good recipes!

We LOVE this recipe. It's super easy and super GOOD!
Taco Bake
1 lb. ground beef
1/2-3/4 pkg taco seasoning
1 14.5 oz tomato sauce
1 c. salsa
1/2 c. milk
1/2 c. water
1 c. shredded cheddar cheese
6 flour tortillas cut into 1" pieces
Cook beef in skillet, add taco seasoning. Add sauce, salsa, milk, water, tortilla pieces, and half the cheese. Spoon into 2 qt. baking dish. Cook uncovered for 30 minutes at 400 degrees. Sprinkle remaining cheese and serve.
such a good idea! When we first moved to Moscow I did this and not only was it easier but we saved so much money too. You can buy things that work for multiple meals. It's great! I need to start doing this again.

My absolute favorite is the Sour Cream Enchiladas. They're great because you can pre-make them and just have them in the fridge until you're ready to bake them. They're also really yummy the next day . I also like the taco soup and the baked penne pasta. The crock pot ones are good too! Ha I'm going off. I'll be checking back to see what else you're going to make. :)
i've done this before and i agree with paige, it is such a nice thing to have your meals planned out and you save money on your groceries for sure. you've inspired me to start doing this again. :)
Oh my goodness! I am so mad because Brady checks your blog I don't always know if you updated or not on bloglines! Now I see I have missed a post. What a great idea! It is easier to cook when it is all planned. You are such a good cook too. By the way I would LOVE the spaghetti bake recipe! : ) Whenever you have time. I can't believe I was like Laurel and missed some of your blogs. You make me laugh about Dwanye Wade. You and Laurel......enough said. Good idea about the menu. I try to go to the store once a week too. I find it is much harder to cook for two than it was for an entire family. So you are getting a good start for the future. Miss you!
